Caprese Salad

2 medium roma tomatoes, sliced 1/4" thick
8 ounces fresh mozzarella, sliced 1/4" thick
1/2 cup fresh basil
1/4 cup extra virgin olive oil
salt and pepper (optional)

  1. Arrange alternating slices of tomatoes, mozzarella and basil leaves on a tray.
  2. Drizzle liberally with extra virgin olive oil.
  3. Season with salt and pepper if desired.

Makes 2 servings
