Sun-dried Tomato Rollups

12 eggroll wrappers
1/4 cup Sun-dried tomatoes
1/2 cup Cream cheese
1/4 cup vegetable oil
salt and pepper
- Combine sun-dried tomatoes, cream cheese, salt and pepper in a bowl.
- Place 2 teaspoons mixture in the center of an individual eggroll wrapper.
- Fold outer edges to the center of the square and roll from bottom to top.
- Heat oil over medium heat in a skillet and shallow pan fry the rolls, turning as they brown.
- Serve hot with plum sauce or similar.
Makes 12 rolls
