Caramelized Carrots

4 large carrots, peeled and sliced into circles
3 tablespoons sugar
1 tablespoon water
1/2 tesapoon dried parsley
salt and pepper
water
- Bring a pot of water to a boil and cook carrots until just tender. Drain and set aside.
- Meanwhile, cook sugar and water over medium heat in a skillet. Stir frequently until a light caramel has formed.
- Add the carrots to the skillet, season with salt, pepper and parsley and coat with mixture. Serve immediately.
