Chive and Bacon Potatoes

4 small potatoes, peeled and quartered
1/2 small onion, chopped
1 teaspoon vegetable oil
2 slices bacon, chopped
1 clove garlic
1 tablespoon chives
salt and pepper
- In a skillet over medium heat add the oil and fry the bacon until just before crisp.
- Add the garlic and the onions and saute until just tender.
- Reduce the heat to medium-low and stir in the potatoes.
- Cover and cook until potatoes are tender, about 20 minutes, stirring occasionally.
- Season with chives, salt and pepper.
Makes 4 servings
