Cream Cheese Corn

1/2 small onion, chopped
2 cloves garlic, minced
1 teaspoon corn oil
1 tablespoon butter
2 tablespoons cream cheese
1 cup corn kernels
1/2 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon white pepper
- Heat corn oil in a skillet over medium heat.
- Add onion and garlic and saute until tender.
- Add corn and cook until tender.
- Mix in oregano, ground cumin and white pepper and stir in butter.
- Stir in cream cheese until just melted and served immediately.
Makes 2 servings
