Cream Cheese Corn

1/2 small onion, chopped
2 cloves garlic, minced
1 teaspoon corn oil
1 tablespoon butter
2 tablespoons cream cheese
1 cup corn kernels
1/2 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon white pepper

  1. Heat corn oil in a skillet over medium heat.
  2. Add onion and garlic and saute until tender.
  3. Add corn and cook until tender.
  4. Mix in oregano, ground cumin and white pepper and stir in butter.
  5. Stir in cream cheese until just melted and served immediately.

Makes 2 servings
