Curried Beef Rolls

1 pound lean ground beef
2 cloves garlic, minced
1 teaspoon ginger puree
1 small onion, minced
2 teaspoons vegetable oil
1 tablespoon curry powder
12 eggroll wrappers
oil for frying
- Heat vegetable oil over medium heat in a large skillet.
- Saute garlic, ginger and onion until tender.
- Mix in curry powder then add ground beef. Cook until beef is no longer pink and set aside to cool.
- Lay out an eggroll wrapper like a diamond in front of you and place a heaping tablespoon of the beef in the lower part of the diamond.
- Fold the bottom edge into the center of the diamond and then fold the sides in as if you were wrapping a present.
- Roll the wrapper up and seal with a bit of water or egg white.
- Repeat until all of the beef has been used.
- Fry the rolls in a deep fryer or in a shallow level of oil over medium heat in a frying pan. Make sure to use an oil that has a high smoke point.
Makes 16 rolls
