Chipotle Potatoes

4 medium potatoes, peeled and cubed
1 tablespoon lime juice
2 tablespoons margarine
4 ounces chipotle peppers in tomato sauce
4 ounces crushed tomatoes
1 tablespoon ground cumin
1 tablespoon black pepper
1 teaspoon paprika
water
- Parboil potatoes in a large pot. Drain and reserve.
- Melt margarine, lime juice and spices in a skillet over medium heat.
- Add tomato sauce to margarine and gradually add chipotle until desired spiciness.
- Stir potatoes into mixture and cook until tender.
Makes 4 servings
