Moroccan Style Carrots
3 large carrots, peeled
1 clove garlic, sliced
1 teaspoon extra virgin olive oil
1 teaspoon white vinegar
1 teaspoon parsley
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon cayenne
salt and pepper
- Slice carrots into small circles.
- Place carrots and garlic in a bowl and microwave covered until just tender.
- Whisk together the remaining ingredients to make a dressing and pour into the bowl while carrots and garlic are still warm.
- Refrigerate and mix before serving.
Makes 2 servings
