Curried Cauliflower and Potato

2 cups cauliflower florets, boiled
1 large potato, boiled and diced
1 tablespoon olive oil
1/2 small onion, chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon sugar
salt

  1. Heat olive oil in a skillet with onions, garlic and ginger and cook until onions soften.
  2. Add the ginger, coriander, cumin, turmeric and sugar and mix well.
  3. Coat cauliflower and potato in mixture. Season with salt to taste.

Makes 4 servings
