Curried Cauliflower and Potato

2 cups cauliflower florets, boiled
1 large potato, boiled and diced
1 tablespoon olive oil
1/2 small onion, chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon sugar
salt
- Heat olive oil in a skillet with onions, garlic and ginger and cook until onions soften.
- Add the ginger, coriander, cumin, turmeric and sugar and mix well.
- Coat cauliflower and potato in mixture. Season with salt to taste.
Makes 4 servings
