Red Cabbage, Carrot and Apricot Salad

1/2 small red cabbage, grated
2 large carrots, peeled and grated
1/4 cup dried apricots, quartered
1 tablespoon lemon juice
1/2 cup vanilla yogurt
- Combine cabbage, carrots and apricots in a bowl.
- Mix lemon juice and yogurt together.
- Coat cabbage, carrots and apricots with lemon juice and yogurt mixture.
- Refrigerate the salad for at least half an hour before serving.
Makes 6 servings
