Sweet and Sour Pork

1 pound pork tenderloin, cubed
1 tablespoon vegetable oil
19 ounces canned pineapple, drained (reserve juice)
1/2 medium onion, chopped
1 tablespoon rice vinegar
3 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon corn starch
1 tablespoon ginger, minced
2 cloves garlic, minced
4 drops red food coloring (optional)
- Combine pineapple juice, vinegar, soy sauce, sugar and corn starch. Add food coloring, if desired.
- Heat oil in a wok at medium heat or large skillet and cook pork thoroughly.
- Add ginger, garlic and onions to the pan and cook until onion is tender.
- Add sauce and pineapple to the pan, reduce heat and let simmer until sauce thickens.
Makes 4 servings
