Sweet and Sour Pork

1 pound pork tenderloin, cubed
1 tablespoon vegetable oil
19 ounces canned pineapple, drained (reserve juice)
1/2 medium onion, chopped
1 tablespoon rice vinegar
3 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon corn starch
1 tablespoon ginger, minced
2 cloves garlic, minced
4 drops red food coloring (optional)

  1. Combine pineapple juice, vinegar, soy sauce, sugar and corn starch. Add food coloring, if desired.
  2. Heat oil in a wok at medium heat or large skillet and cook pork thoroughly.
  3. Add ginger, garlic and onions to the pan and cook until onion is tender.
  4. Add sauce and pineapple to the pan, reduce heat and let simmer until sauce thickens.

Makes 4 servings
