Holy Moly Rice-a-roni

1 cup rice
2 cups chicken broth
1 tablespoon vegetable oil
2 cloves garlic, minced
1/2 small onion, minced
1 small tomato, chopped
1 red chili, sliced (optional)
1 tablespoon cumin seed
2 teaspoons chili powder
1 teaspoon dried oregano
- Heat oil in skillet and add rice.
- Mix spices, onion and garlic into rice and stir until browned.
- Add remaining ingredients.
- Cook uncovered until rice is tender and water is evaporated.
Makes 6 servings
