Dilly Peas and Carrots

4 medium carrots, peeled and sliced
2 cups water
1 cup frozen peas, thawed
1 clove garlic
1 tablespoon olive oil
1 tablespoon fresh dill
salt and pepper
- Boil salted water in a pot and add sliced carrots.
- Cook carrots until fork tender.
- Drain carrots and set aside.
- Heat oil and garlic in a skillet.
- Add cooked carrots and thawed peas to pan.
- Toss carrots and peas in garlic oil until coated.
- Season with dill, salt and pepper.
Makes 4 servings
