Brown Basmati Pilaf

1 cup brown basmati rice
2 cups vegetable broth
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup slivered almonds, toasted
1 tablespoon butter
1 teaspoon olive oil
salt and pepper
- Melt butter in pot and add rice.
- Add vegetable broth to pot and cook covered until rice is tender and liquid is evaporated.
- Heat oil in skillet and fry celery and onions until translucent.
- Combine ingredients, season with salt and pepper and garnish with almonds.
Makes 4 servings
