Brown Basmati Pilaf

1 cup brown basmati rice
2 cups vegetable broth
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup slivered almonds, toasted
1 tablespoon butter
1 teaspoon olive oil
salt and pepper

  1. Melt butter in pot and add rice.
  2. Add vegetable broth to pot and cook covered until rice is tender and liquid is evaporated.
  3. Heat oil in skillet and fry celery and onions until translucent.
  4. Combine ingredients, season with salt and pepper and garnish with almonds.

Makes 4 servings
