Tzatziki Cucumber Salad

1 cup plain yogurt
1 large English cucumber
2 cloves garlic, chopped
1 tablespoon extra virgin olive oil
1/2 teaspoon fresh lemon juice
1/2 teaspoon sugar (optional)
2 tablespoons fresh dill
- Cut unpeeled cucumber in half lengthwise and scoop out seeds.
- Mix yogurt with garlic, lemon juice, oil and dill. Add half a teaspoon sugar if necessary.
- Mix all ingredients together, coating the cucumber.
- Refrigerate and serve cold.
Makes 4 servings
