Harvest Honey Squash

2 cups water
1 pound butternut squash, peeled and cubed
1/4 cup butter
1 tablespoon honey
1 teaspoon dried parsley
1 teaspoon dried thyme
salt and pepper

  1. Boil cubed squash in water until fork tender.
  2. Drain squash and return to pot.
  3. Mash squash with butter, honey and season with spices.

Makes 4 servings
