Teriyaki Salmon Fillets

2 six ounce salmon fillets
1/2 cup soy sauce
1/4 cup pineapple juice
1 teaspoon ginger puree
2 cloves garlic
2 tablespoons sugar
2 tablespoons rice wine vinegar
3 scallions
- Mix together all ingredients except the salmon and scallions.
- Marinade salmon fillets in mixture for at least an hour in the refrigerator.
- Discard marinade and cook salmon under broiler for approximately 12 minutes.
- Remove from oven and let rest. Garnish with scallions.
Makes 2 servings
