Aloha Sweet Potatoes

1 pound sweet potato or yam
2 tablespoons butter
1/2 cup dark brown sugar
1 tablespoon spiced rum
1/2 cup water

  1. Boil sweet potatoes in their skins until tender.
  2. Let cool, then peel and cut into slices 1" thick.
  3. In a large skillet melt butter and stir in brown sugar and water.
  4. Cook mixture on medium heat until it forms a syrup.
  5. Reduce heat and add sweet potatoes, turning until covered with glaze.
  6. Spoon over remaining glaze if desired.
